1 lb. flour, 1 lb. black treacle, one dessert-spoonful of ground ginger, one dessert-spoonful mixed spice, 1/2 lb. brown sugar, 1/2 lb. fresh butter, 1/2 pint milk, 1/2 tea spoonful carbonate soda, four eggs, a little finely-chopped citron peel. Mix all the dry ingredients together, warm the milk, and dissolve the butter in it; beat up the eggs, then add the milk and treacle. Bake three-quarters of an hour in a square cake tin, not very deep, or flat saute pan. The mixture should be quite a running consistency before baking ; add a little milk if necessary.This is a moist, black gingerbread.
