When we find a third element, carbon, in combination with hydrogen and oxygen, we have a large group of food substances. In some of these the same relation exists between the hydrogen and the oxygen as is found in water, twice as much of the former as of the latter. Hence this group of substances is given the descriptive name of carbohydrates. They are just what the name implies, combinations of carbon with hydrogen and oxygen in the same proportion that occurs in water.
