Gelatin.....................
Water......................
Cream......................
White sugar.................
Extract of lemon.............
1/2 ounce. 1/2 pint. 1 pint. 3 ounces. Sufficient to flavor.
Dissolve the gelatin in the water by means of heat, meanwhile whipping the cream and sugar together and adding the lemon. Next, while the gelatin solution is still warm, pour in the cream slowly, and beat until stiff enough to drop from the spoon; finally pour in moulds.
Milk may be used instead of water in this preparation.
