Put three tablespoonfuls of pearl barley soaked over night into a double boiler with a quart of clear water and boil slowly down to a pint; strain, and allow the liquid to set into a jelly. In making this jelly from barley flour, thoroughly mix one tablespoonful of this flour with two tablespoonfuls of cold water, add gradually to four ounces of boiling water and boil for twenty minutes; strain.

Used for same purpose as barley water.
