Wine Sauce

2 tea-cups of sugar, 1 tea-cup of butter, stir to a cream, beat 2 eggs very light, and stir all together, add 1 cup of wine, mix and set on top of tea-kettle of boiling water. It must not be put on the stove, nor boil.

Pudding Sauce

2 eggs well beaten, 1 cup pulverized sugar. When mixed pour over 1 cup boiling milk, and stir rapidly. Flavor as you please.

Hard Sauce For Pudding, Rice, Etc

Take 1 tea-cup sugar, one-half tea-cup butter, stir together until light, flavor with wine or essence of lemon. Smooth the top with a knife, and grate nutmeg over it.
