A dark juice is obtained by adding to the crushed raspberries, before the fermentation, slight quantities of sugar in layers. The ethyl-alcohol forming during the fermentation is said to cause a better extraction of the raspberry red. Furthermore, the boiling should not be conducted on a naked fire, but by means of superheated steam, so as to avoid formation of caramel. Finally, the sugar used should be perfectly free from ultramarine and lime, since both impurities detract from the red color of the raspberries.

All the solid constituents are powdered moderately fine and thoroughly mixed; the oils dropped in last, and rubbed into the powder.
