There are other substances on the market known as coffee essence, which are not of as high a grade, as a rule, as the dry extracted coffee mentioned above. The coffee essences often contain materials other than coffee. In other words they are not true essences, which would mean a concentrated extract of coffee, but such an extract mixed with other bodies. The consumer sometimes is brought into contact with this kind of coffee on buffet cars or even in regular dining cars or in hotels or restaurants. There is not much to be said in favor of such essences. They are not comparable in quality with the genuine extracts.
