A genuine coffee extract is obtained by securing the extract in the usual way, then evaporating the water, preferably in a vacuum, until the residue is dry. These extracts are ready for use when dissolved in the proper quantity of water. The quality of the coffee does not seem to suffer very greatly by the evaporation of the extract to make the dry powder, although it is undoubtedly true that some volatile, aromatic substances must escape in this process. The soluble coffee thus prepared is useful for emergencies, as, for instance, picnic parties, early breakfasts, and in other circumstances where it is not convenient to make coffee in the usual way. All that is necessary to produce a cup of coffee with the extract is to heat the water and dissolve the proper amount of extract therein. A very considerable trade has been established in this country in extracts of this kind.
