The greater number of beers of domestic origin are made only partly from barley malt and the rest of the alcohol is derived from the substitutes for barley which are employed. Some of these beers are of high quality, while others are of low-grade quality, as the substitutes for barley are used only when they cost less than barley malt itself. The cities of Milwaukee and St. Louis are especially renowned as centers of beer making. There are other great centers where the brewing industry is practised, as, for instance, in Chicago, Cincinnati, New York and Philadelphia. In fact, until the states began to enact prohibition laws there was hardly a large city in the United States where beer was not made.
