The region of Italy embracing Rome and extending southeastward almost to Naples has from earliest historical periods produced wines of some importance. The alcoholic content of these wines for the most part is high ranging from 10 to 13 percent. In order to preserve the wines during the hot season numerous subterannean cellars are provided where a cooler and more favorable environment for the wines of finer quality is found.
