Scrape parsnips, cut in halves, remove the white, pithy part, boil in salt water until tender, then fry in butter.

Pour boiling water over maccaroni and boil until tender, then pour off water, place in baking dish a layer of maccaroni, then a layer of grated cheese, and so on until dish is full, seasoning each layer with salt, pepper and bits of butter, then put on 1 cup milk. Bake slowly ½ hour.
