One-half teaspoon mustard, one teaspoon powdered sugar, one-half teaspoon salt, yolk one egg, pinch cayenne, three-fourths cup milk, two teaspoons flour, two teaspoons melted butter, one-fourth cup of hot vinegar. Method: Mix the dry ingredients, and stir into them the yolk of egg, butter and milk, stir over hot water until it begins to thicken, then stir in the vinegar. Beat yolks of four eggs, add one cup vinegar. In another bowl mix two tablespoons flour, one teaspoon salt, one-third cup sugar, one teaspoon mustard and a dash of red pepper (sweet red pepper is best). When well mixed stir in one-half cup water and combine with egg mixture, strain, add lump of butter (about one tablespoon) and cook over hot water until thick and smooth. - Mrs. McD.
