No. 1350. - Eye is a hardy (secale cereal) plant and is closely allied to wheat. The grain is ground into flour and constitutes a large portion of breadstuff. The Rye flour is the best for making a cake called congloffs, which is of Polish origin. The various recipes will be found in the Book on Pastry.
No. 1351. - The time for sowing is from the middle of August to the first of September, and it succeeds best in sandy soil. One ploughing is given,"and the seed is sown broadcast. If cut before it is fully ripe, the grain makes better flour and produces a larger quantity. If intended for seed, the grain should be fully ripe.
