Everyday Sauce

One pint boiling water, add 1 heaping tea cup sugar, tablespoon butter, pinch of salt, and 1 tablespoon corn starch dissolved in a little cold water. Season with nutmeg or vanilla and cook until clear. Mrs. McKercher.

Egg Sauce

One cup white sugar, 1 cup boiling milk, when melted stir in 2 well beaten eggs, flavor with lemon or vanilla and serve immediately.

Lemon Sauce

Beat well together I tablespoon corn starch, 1-2 cup sugar, 1 egg, and pour into it 1 pint of boiling water, add 1 tablespoon butter, and stir over the fire until thick, add the juice and rind of 1 lemon.

Lemon Sauce

Half cup butter, beaten to a cream with 1 cup sugar, add the juice of 1 lemon, and 6 tablespoons boiling water, pour in one at a time. Set over boiling water until thoroughly hot.

Hard Sauce

Two cups Golden C brown sugar, creamed with 1-2 cup of butter; continue to beat this until it becomes light and fluffy.

Pudding Sauce

One cup sugar, 2 eggs. 1-2 cup butter, beat to a cream and cook for 5 minutes over hot water. Flavor with vanilla.
