Fried Egg Plant

Slice the egg plant without paring, into 5 or 6 pieces, omitting, the end parings. Boil in salted water five minutes to extract the strong taste. Drain. Dip each slice in beaten egg, and then in bread-crumbs. Fry a light brown on both sides in butter or dripping.

Egg Plant With Batter

Prepare and boil as above. Drain and dip each shoe in fritter batter, and fry in hot lard. Drain before serving.

Scalloped Egg Plant

Boil the egg plant until tender. Remove the skin; mash fine; mix with an equal quantity of bread or cracker-crumbs. Put in a buttered baking dish. Season with pepper, salt and butter. Sprinkle crumbs over the top and bake one-half hour. This makes a delightful and digestible dish.
