1 peck potatoes

1 quart milk

5 tablespoons salt

12 to 16 egg whites 1 pound cheese grated 1 1/2 pounds bacon

Boil and mash potatoes; add salt, cheese, and milk; beat until creamy. Fold in stiffly beaten whites, pile in baking dishes; cover with very thin slices of bacon, allowing one to each person. Bake thirty minutes, or until bacon is done. Serve as main luncheon dish.
