4 quarts cooked soy beans 4 quarts corn 2 quarts cooked hominy 2 quarts mashed potato 1 pt. dried, ground crumbs 1 quart strained tomato
11/2 teaspoons pepper
3 tablespoons salt or more
1/2 cup grated onion 1 tbspn. vegetable extract in 1 1/2 cups boiling water 6 eggs, beaten well
Drain beans and put through meat chopper. If fresh corn is used, run sharp knife down center of each row of kernels, and remove pulp by scraping. Kornlet or chopped canned corn may be used. Mix ingredients thoroughly, adding bean water or more tomato if not moist enough. It should be so moist that it will not keep its shape at all. Rice may be used in place of hominy. Turn into baking dishes, and cook in moderate oven about an hour.
