Soda Biscuits

1/2 teaspoon soda 2 cups white flour 1 tablespoon. baking powder

3/4 cup sour milk 2 tablespoons butter 1/2 teaspoon salt

Work flour into butter thoroughly. Add the dry ingredients and then pour on the milk gradually. Roll out and cut into rounds or drop into greased muffin pan. Bake about fifteen minutes in a hot oven (400 degrees F.).

Quick Tea Biscuit

2 cups flour

2 tablespoons baking powdering powder 2 tablespoons lard

2 teaspoons sugar 1 cup sweet milk Pinch salt

Stir well and drop from spoon in buttered gem pan. Bake in hot oven.

Never Fail Biscuit

3 cups or flour 3 teaspoonfuls of shortening 3 teaspoonfuls of baking powder

1 teaspoonful salt 3/4 cup sweet milk

Mix dry, cut shortening in with knife. Add milk and mix quickly. Do not roll.

Cheese Biscuits

Sift together two cups flour and three teaspoons baking pow-der; add three-fourths cup grated American cheese and one-half teaspoon salt. Add two tablespoons butter and mix in thoroughly with steel fork. Add one cup milk. Drop from spoon in small portions on baking sheet. Bake 15 minutes in moderate oven (375 degrees). Makes about eighteen small biscuits.

Quick Parker House Rolls

6 teaspoons baking powder 4 cups white flour 1 1/2 cups milk

2 tablespoons shortening, melted 1 teaspoon salt

Sift together the baking powder, flour and salt. Add the milk and melted shortening slowly to the dry ingredients. Stir all together until smooth. Roll to 1/2 inch thickness on a lightly floured board. Cut round with a glass or with a cookie cutter. Fold over the finger and pinch down the edges. Stand in a pan in a warm place and allow to rise. Separate rolls if neces' sary after rising. Paint tops with butter and bake for fifteen minutes in a very hot oven (450 degrees F.). Serve warm with butter.

Blueberry Gems

1  cup blueberries

2 1/2 cups flour

4 teaspoons baking powder 1 cup milk

1 egg

1/4 cup sugar

1/4 cup shortening or butter

1/2 teaspoon salt

Mix 1/2 cup flour with the blueberries and allow to stand for one hour.

Cream the butter with the sugar and add the beaten egg. Sift the flour with the salt and baking powder. Add 1/2 cup milk to the berries and 1/2 cup milk to the sifted flour. Mix all the ingredients adding the berries last.

Bake for one-half hour in a hot oven in greased muffin tins.

Cinnamon Rolls

1/2 teaspoon cinnamon

2  cups flour

3  teaspoons baking powder 2 tablespoons butter or substitute

2 tablespoons citron 2 tablespoons sugar 1/2 cup raisons or currents 1/2 cup milk 1/2 teaspoon salt

Mix flour with butter and add milk, baking powder and salt. Mix thoroughly and turn out onto floured board. Roll quite thin and paint with melted butter. Spread raisins and citron which have been chopped, cinnamon mixed with sugar and roll over and over like a jelly roll.

Cut into pieces an inch thick and arrange on flat side in greased pans. Bake in a hot oven for one-quarter hour.
