Bran Muffins

1   cup bran Hour

2  cups graham flour 1 1/2 cups milk

2 tablespoons molasses 1 teaspoon soda 1/2 teaspoon salt

Mix milk and molasses, add the dry ingredients. Bake in a very hot oven for one hour. This recipe should make a dozen muffins.

Cheese Rolls

3/4 cup grated American

cheese 2 cups flour 4 teaspoons baking powder

1  cup milk

2  tablespoons butter or sub-stitute

1 teaspoon salt

Work flour into butter, add the other dry ingredients, then stir in the milk gradually. Mix well and add the grated cheese. Pat and roll to one-half inch thickness on a lightly floured board. Cut with round cookie cutter and bake in a greased pan for fifteen minutes in a hot oven.

French Rolls

4 cups flour

1 cake compressed yeast 3 cups lukewarm water 1/2 cup sugar

1/2 cup butter 1/2 teaspoon salt 1 egg

Dissolve the yeast in a little warm water.

Beat the egg, and add to the dissolved yeast. Cream butter with the sugar. Add the flour and the rest of the warm water.

Knead well. This should be a stiff dough; add more flour if necessary. Let stand in a warm place to rise. When bulk has doubled, turn out on a floured board. Roll or braid into small rolls; put into greased or floured pan and let rise again to double the bulk. Bake in a very hot hoven (400 degrees F.) for about fifteen minutes.

If kept in an icebox this dough will keep and requires only to be kneaded, risen and baked.

Parker House Rolls

1 quart sifted flour

1/2 ounce compressed yeast

1 cup warm milk

1/4 cup sugar

1 teaspoon salt

1  tablespoon butter

2  eggs

2 large baked potatoes

Dissolve the yeast in a little warm milk.

Mix the butter, milk, salt and sugar. Crumble the potato while still hot and knead into flour, yeast and liquid ingredients. Roll out thin on a floured board and cut with a small round biscuit cutter. Fold over the finger so that edges lap. Set close to one another in a greased pan, allow to rise and then bake in a moderate oven (375 degrees F.) for fifteen minutes. Serve warm, with butter.

Light Rolls

1 medium size potato (mash) 1/2 cup potato water 1 cup warm milk 1 cake yeast

3/4 cup shortening 1 teaspoon salt 6 1/2 cups flour 1/3 cup sugar

Bake 20 minutes in a medium oven.

Potato Rolls

1 cup milk

1 cup mashed potatoes

3/4 cup sugar

3/4 cup lard

1 teaspoon salt

2 eggs

1 yeast cake dissolved in hot water 5 cups flour

Mix the potato, sugar, lard, and salt, and then add the milk (scalded). When lukewarm, add the eggs, yeast, and one cup of flour. Beat well, then let stand two hours in a warm place. Add four cups flour and let stand two more hours. Make into rolls, using as little flour as possible. Do not kneed. Let stand one hour and bake in hot oven.
