Apple Roll

2 cups flour

4 tablespoons sugar

5 tablespoons shortening

2 teaspoons baking powder

 1/2 teaspoon salt

2/3 cup sweet milk

Sift dry ingredients, then cut in the shortening, add the milk, stirring all together. Roll dough on board about 1/4 of an inch thick, keeping dough in oblong shape; spread with melted butter, then a generous layer of finely chopped apples and sugar. Sprinkle cinnamon over this and roll tightly into a long roll. Cut slices about 2 inches thick and place in greased pan. Keep slices close together; on top of each slice place 1/3 of an apple. Bake in oven until apples on top are brown. Serve hot with rich sauce.

Peanut Macaroons

1 egg white

1 cup powdered sugar

1/8 teaspoon salt

1 cup peanuts chopped fine

Drop from spoon two inches apart. Bake 15 minutes in moderate oven. Flavoring may be added if desired.

Drop Peanut Cookies

l 1/2 cups light brown sugar 3/4 cup shortening

1 egg

1/2 teaspoon soda

1/2 teaspoon salt

3 tablespoons milk

3/4 cup ground peanuts

2 1/2 cups flour

Cream sugar and shortening.

Add the egg well beaten. Sift dry ingredients and add the peanuts and milk. Drop batter in pieces the size of a walnut on a cookie sheet and bake in hot oven for 15 or 20 minutes.

Oatmeal Cookies

1 cup sugar

3/4 cup shortening

1 egg

1 cup sour milk

1/2 teaspoon soda

2 cups rolled oats

1/2 teaspoon salt

2 teaspoons baking powder

2 cups flour

Mix in order named. Beat well. Drop by teaspoons on well greased tins. Bake in hot oven.

Banana Puffs

Take as many bananas as there are persons to serve. Roll in sugar and cinnamon, then roll each banana in thin pie crust. Bake in hot oven 15 minutes. Serve with whipped cream or lemon sauce. Puffs may be served hot or cold.

Lace Cookies

1 cup post toasties

1  cup cocoanut

2/3 cup sugar

2 eggs

1 cup oatmeal

1 teaspoon baking powder

Pinch salt

1 teaspoon vanilla

Mix dry ingredients and add to mixture of eggs, butter, and vanilla. Drop with a teaspoon on inverted tins and bake slowly.

English Apple Pie (No pastry)

2 very large mellow apples

1 cup sifted flour

1/2 cup brown sugar Butter size of an egg

1 teaspoon white sugar

1/4 teaspoon nutmeg

1 teaspoon lemon juice

Mix well the brown sugar, flour and butter (dry). Grease deep baking dish; put in all the apples sliced very thin, add an extra piece of butter about size of English walnut sliced thin and placed over apples; sprinkle over this white sugar. Add teaspoon water, nutmeg and lemon juice. Place on top of pie the dry mixture (sugar, butter and flour). Cover contents thoroughly. Bake in moderate oven 30 minutes. Serve hot or cold with whipped cream.
