Apple-Sauce Torte

4 eggs

1 can evaporated milk

Juice of 1 lemon

2 cups apple-sauce (un-sweetened)

1/2 cup melted butter

Mix yolks of eggs, apple-sauce, lemon juice and milk together; add stiffly beaten whites. Line sides and bottom of torte pan with one package of ground graham crackers, mixed with scant cup melted butter. Bake in a slow oven. Reserve some of the graham cracker mixture to sprinkle on top of cake. Serve with whipped cream.

Scotch Chocolate Cake

1/2 cup butter or shortening

1 1/2 cups sugar 2 eggs

1 square chocolate dissolved in 1/2 cup of boiling water

1/2 cup sour milk

1 teaspoon soda, mixed with 2 cups of flour

1 teaspoon vanilla

Bake in sheet or two layers about thirty minutes.

Graham Cracker Cake

1/2 pound graham crackers crush to powder form

1/2 cup butter

1/2 cup sugar

1 1/2 teaspoons baking powder

Pinch soda

2 eggs

3/4 cup sour milk

2 teaspoons vanilla

Cream butter, add crushed crackers, baking powder and soda, sugar; add egg yolks, stir; add sour milk. Stir constantly; add beaten egg whites, and vanilla. Pour in buttered cake tin; place in oven; bake.

Eggless Spice Cake

3 cups pastry flour

1 cup sugar

3 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon allspice

1 teaspoon mace

1 teaspoon cloves

1/2 cup melted shortening

1 1/4 cups water

1 teaspoon vanilla

Sift together all dry ingredients. Add shortening with water and vanilla and stir until well mixed. Bake in layers in a moderately hot oven (375 degrees) 20 minutes; in a loaf in a moderate oven (350 degrees) 45 minutes. When cool spread with maple icing:

1 tablespoon hot coffee

3 tablespoons maple syrup

Few drops of vanilla Confectioners sugar

Mix together coffee, syrup and vanilla and beat in confectioners sugar until stiff enough to spread.

Caramel Cake

1/2 cupful butter

3/4 cupful sugar

4 egg yolks, beaten light

Second 3/4 cupful sugar

4 teaspoons baking powder

1/4 teaspoon salt

1 cup milk

1 teaspoon vanilla

4 egg whites, stiffly beaten

4 cups flour

Cream shortening with 3/4 cup sugar. Beat egg yolks until light and add second 3/4 cup sugar, beating well. Add the egg and sugar mixture to that of the shortening and sugar, mixing well. Sift the flour, add the baking powder and salt and sift three times. Add this flour mixture and the milk alternately to the first mixture. Then add vanilla extract. Fold in the egg whites and bake in two layer cake pans in a moderate oven, 350° F. Put the layers together and cover cake with a caramel frosting.

1-2-3-4 Cake

1  cup butter

2 cups sugar

3 cups flour

4 eggs

1 cup sour cream

1 teaspoon soda Spices

Cream butter and sugar; add eggs and stir until creamy. Add the sour cream and soda dissolved in cream and lastly the flour containing the spices.
