Mayonnaise

2 tablespoons sugar 1 tablespoon flour

1 egg

Boil until it thickens.

1/2 teaspoon mustard (dry)

1/3 cup vinegar and water

Uncooked Mayonnaise

1 1/2 to 2 cups olive or salad oil

1 teaspoon sugar

1 teaspoon salt

2 1/2 teaspoons dry mustar

2 tablespoons lemon juice

2 egg yolks

Beat the egg yolks thoroughly, add salt, sugar and mustard. Add the lemon juice and then very gradually beat in the oil. Keep very cold.

Boiled Mayonnaise Dressing

2 egg yolks

Juice of one lemon

1/2 cup cream

1 tablespoon flour

1/2 cup milk

2 tablespoons sugar

2 tablespoons dry mustard

1/2 teaspoon salt

Heat the cream in a double boiler, add the flour, sugar, mustard and salt. Stir smooth and pour in the milk. Beat egg yolks and add lemon juice; turn into the mixture, cook for three minutes. Whipped cream may be added before serving.
