Ham And Cheese Puff

1/4 pound ground boiled ham 1/4 pound grated cheese 3 eggs.

1 teaspoon lemon juice 1 cup milk.

1 teaspoon prepared mustard 1/2 cup cracker crumbs 1 teaspoon baking powder.

Beat yolks and fold in beaten egg whites. Pour into greased bake dish; cover with cracker crumbs; dot with bits of butter, and bake 15 to 20 minutes in moderate oven.

Luncheon Cheese

1/2 loaf stale bread.

1 pound mild cheese 1 1/2 cups milk.

2 tablespoons butter.

2 eggs.

1 1/2 teaspoons salt 1/2 teaspoon mustard and paprika.

1st. Cut bread in small cubes; spread with butter. Line baking dish with strips of bread buttered side next to dish. Beat eggs; add seasoning and milk and pour over cheese. Bake in hot oven thirty-five minutes. Set dish in water.

2nd. Grind bread. Omit cheese. Season with nutmeg and use left-over chopped liver and gravy to pour over.

"Blushing Bunny"

1 can Campbell's tomato soup 1 cup water.

1 cup grated cheese 4 eggs.

Bring soup to a boil; add cheese and cook slowly until cheese is melted; drop in four eggs, and stir whole only after eggs have set. Serve on toast or crackers. This recipe serves four.

"English Monkey"

1 tablespoon butter.

1 cup of cheese (cut up) 1 cup crumbled crackers.

1 cup cream poured on crackers short time before using.

1 egg slightly beaten Salt and pepper to taste.

Melt butter; put in cheese, when soft add crackers and cream. When thoroughly heated add egg. Serve on crackers, or toast. Good luncheon or Sunday evening supper dish.

Man's Delight

2 cups cooked rice.

1/2 green pepper, cut small 1 can Campbell's tomato soup.

1 heaping cup grated cheese 1 heaping tablespoon butter on top.

Place ingredients in alternate layers; bake in oven twenty minutes.

Baked Rarebit

1/2 pound American cheese ltablespoon butter Salt, paprika 1 cup milk.

1 cup bread crumbs made by crumbling soft bread between fingers.

2 eggs.

Cut cheese in thin slices. Sprinkle a layer of buttered soft crumbs in buttered baking dish, cover with a layer of cheese, add salt and paprika. Add layers of crumbs, cheese and seasonings until dish is almost full. Add eggs beaten slightly, and milk. Bake in moderate oven until firm.

Welsh Rarebit

2 pounds Cheese (MacLaren's Rarebit cheese or Kraft's Old English) broken in pieces The top of a quart of milk and 1 cup milk.

2 tablespoons cornstarch 1 teaspoon mustard.

1 teaspoon salt Plenty of paprika.

2 tablespoons Worcestershire Sauce.

Use double boiler. Mix cornstarch with top of milk in boiler; add mustard, salt, paprika and cheese. Add cup of milk. Stir constantly. When done add Worches-tire sauce and spread on crackers or toast.
