2 medium sized Onions.
2 oz. Butter.
1 lb. Artichokes.
1 pint of Water.
1 pint of Milk.
1 tablespoonful of Flour.
Salt and Pepper to taste.
Peel and mince the onions, melt the butter in a saucepan or a casserole, add the onions and fry until brown. Scrub the artichokes and cut them into thin slices, and add to the onions, stir well over the fire for 5 or 10 minutes, add the flour, stir well in, then add the water, bring to the boil, add the milk and simmer gently for 1 1/2 hours, add salt and pepper to taste, pass through a wire sieve, reheat and serve with fried croûtons of bread.
