1 oz. Butter or Nut Margarine.
1 teaspoonful of Flour or Cream of Rice.
1/2 pint of Milk.
2 oz. milled or grated Cheese.
Cayenne Pepper to taste.
Melt the butter in a stewpan, stir in the flour and cook for 5 minutes, stirring all the time; care must be taken not to brown the flour. Add the milk and cook until it thickens, add the grated cheese and cayenne, and keep stirring until quite smooth. Serve with cauliflower, timbales, etc.
