Prepared with old rum and ripe wild cherries. In the preparation of cherry rum the cherries are allowed to stay in the rum for a week or longer. At the time the maceration begins the cherries are pressed, but the force used is not sufficient to break the stones. At the end of a week a small quantity of sugar is added and the mixture thoroughly stirred and strained through filter paper or closely woven cloth.
