No. 1.
1/2 cup ground cracklings 1 cup molasses
1 cup sour milk
2 cups graham flour 1/2 cup corn-meal
4 teaspoons baking-powder 1/2 teaspoon soda
1 teaspoon salt l cup seeded raisins
2 tablespoons white flour 1 teaspoon cinnamon
1/2 teaspoon each, mace, cloves, allspice, ginger
Mix and sift the dry ingredients, excepting the white flour. Add molasses and milk to cracklings. Combine mixtures. Mix white flour and raisins and add to mixture. Turn into greased mold. Cover and steam three hours. Serve with caramel or lemon sauce.
No. 2.
1 cup graham flour 1 cup white flour 1 teaspoon salt 3/4 teaspoon soda
1 cup molasses 1 cup sour milk
1 egg
1 cup raisins
Mix and sift the dry ingredients, keeping out one-half cup of flour to sift over the raisins. Add the molasses, milk and beaten egg. Mix well, then add the raisins which have been dredged with flour. Pour into greased molds and steam two and one-half hours. Serve with any sauce desired.
