6 oz, Spaghetti.
1 large teaspoonful of flour
3 oz. milled Cheese.
1 oz. Butter.
1/2 pink of Mi1k.
A little Cayenne Pepper.
Put the spaghetti into boiling salted water and cook for 30 minutes; drain. Melt the butter in a saucepan, add the flour, and cook for a few minutes without browning, add the milk, and stir over the fire until it thickens; then add 2 oz. of the cheese, the cayenne, and the spaghetti; then mix and turn into a pie dish, sprinkle with the rest of the cheese and cook for 1/2 hour in a moderate oven. Serve with grilled tomatoes or dressed spinach.
