Lean beef with bone.............

Boiled rice or barley.............

1 pound. 1 quart.

1 teaspoonful.

2 tablespoonfuls.

Remove fat from meat and cut into small pieces, put, with crushed bone, in a kettle, add water and let stand for half-an-hour. Heat slowly to boiling, skim and add salt. Simmer, without boiling, for four hours, remove fat and strain. At time of serving add rice or barley, previously well soaked and cooked.
