Beef Extract

10,105. One pound lean beef cut fine, put into one pint cold water; add six drops muriatic acid. Mix thoroughly, let stand one hour, strain and press until all the liquid is extracted.

Beef juice.

Score and boil one minute pieces of beef about the size of the palm of the hand; press out the juice with a lemon squeezer; add a pinch of salt, and before serving, make it hot.

Beef Broth

Put one pound of good lean beef, cut in small pieces, in two quarts of cold water, and boil slowly, keeping it well covered, one and one-half hours; then add half a teacup tapioca which has been soaked three-quarters of an hour in water, enough to cover, and boil half an hour longer. Add a small bit of parsley and a slice of onion. Strain before serving, seasoning slightly with pepper and salt. A restorative after acute disease.

Beef, Raw

Take half a pound of juicy beef, free from any fat, mince it very finely; then rub it into a smooth pulp either in a mortar or with an ordinary potato masher, .and press it through a fine sieve. Spread a little out upon a plate, and sprinkle over it some salt, or some sugar, if the child prefers it. Give it alone, or spread upon a buttered slice of stale bread.

This is an excellent food for children with dysentery, and also for adults.

Beef Tea

Take one pound of juicy lean beef, and mince it. Put it with its juice, into an earthen vessel containing a pint of tepid water, and let the whole stand for one hour. Then slowly heat it to the boiling point, and let it boil for three minutes. Strain the liquid through a colander, and stir in a little salt If preferred, a little pepper or allspice may be added.

Biscuit Jelly

Pour a quart of boiling water over a two ounce biscuit, boil until reduced one-half, strain, and stir in a little wine and half an ounce of white sugar, simmer until reduced to half a pint, and set aside to cool.

Useful in debilitated conditions of the digestive organs.

Blood Of Animals

In cases of wasting anaemia, and prostration, the fresh blood of animals, as fowls, mixed with warm wine, or milk punch, warm lemonade, milk or coffee, and taken immediately before coagulation, is very useful. Decoction Of Bran. 1

Take of fresh wheat bran, one pint; water, three quarts. Boil down one third, strain off the liquor, add sugar or honey, according to the taste of the patient. Bran tea may be made by using boiling water, and letting the mixture stand in a covered vessel for three or four hours.

Bran-Flour Telly

Take half a pint of bran flour, moisten it with cold water, then stir it into a quart of boiling water; let it boil slowly for half an hour, stirring it almost constantly to prevent scorching; then pour through a coarse sieve into a mould; when cold turn it out, and eat with milk or cream, with a little sugar if desired.
