¾ cup cold water 1/3 cup heavy cream 2 1/2 tablespoons melted butter.

3 tablespoons grated cheese 1/2 teaspoon salt 1/8 teaspoon pepper Few grains cayenne Few drops onion juice.

Beat eggs slightly and add remaining ingredients. Turn into buttered timbale moulds, set in pan of hot water and bake until brown. Remove to hot platter and pour around.

Bread Sauce

1 1/4 cups milk.

1/3 cup fine stale bread crumbs 1 onion 5 whole cloves.

1 ½ tablespoons butter ½ teaspoon salt Few grains pepper ½ cup coarse stale bread crumbs.

1 ½ tablespoons butter.

Cook milk, bread, and onion stuck with cloves in double boiler, twenty-five minutes. Remove onion and add butter, salt, and cayenne. Pour over custard and sprinkle with coarse crumbs browned in frying pan in remaining butter.
