1 medium-sized Cauliflower.
1 gill of Milk.
2 oz. milled Cheese.
1 small teaspoonful of Flour.
1 oz. Butter.
Salt and Cayenne.
Steam the cauliflower wrapped in greaseproof paper 1 hour, or cook in boiling salted water until tender; do not let it break. Melt the butter in a saucepan, add the flour, stir over the fire for 2 or 3 minutes, do not let it brown; add the milk and stir until it thickens, then add the cheese and cayenne, cook for a few minutes. Put the cauliflower into a fireproof dish, pour the sauce over it, sprinkle with milled cheese, and brown in the oven or under the grill. Serve very hot.
