Plain Griddle Cakes

3 cupfuls bread flour

4 teaspoonfuls baking powder

1 teaspoonful salt

2 tablespoonfuls melted butter or other fat 2 tablespoonfuls sugar 2 cupfuls milk 1 egg

Mix the dry ingredients. Beat the egg light, add the milk, and pour slowly onto the first mixture, beating continuously. Add the shortening, and fry as in the general directions.

Bread Crumb Griddle Cakes

1 cupful fine dry bread crumbs 2 1/4 cupfuls sour milk or buttermilk 1/2 cupful bread flour 1/2 teaspoonful soda

1/2 teaspoonful salt

1 tablespoonful sugar

1 teaspoonful melted lard or dripping 1 egg, optional

Soak the crumbs in the milk for three-quarters of an hour, then add the flour and other dry ingredients sifted together, and the egg and shortening. Fry as in the general directions.

Cornmeal Griddle Cakes

3/4 cupful home-ground corn-meal

1 1/4 cupfuls bread flour

4 teaspoonfuls baking powder

1/2 teaspoonful salt

2 tablespoonfuls sugar 1 1/2 cupfuls milk

1 egg

2 tablespoonfuls melted shortening

Mix together the cornmeal, flour, baking powder, salt and sugar. Beat the egg light, add the milk and stir into the dry ingredients, with the melted shortening. Fry as in the general directions.

Entire Wheat Meal Griddle Cakes

3 cupfuls entire wheat meal

1 cupful bread flour

2 cupfuls milk

3 teaspoonfuls baking powder 1/2 teaspoonful salt 1 egg

Beat the egg light. Add the milk, then the baking powder and salt mixed with the meal and flour. Fry according to the general directions.

Rice Griddle Cakes

2 1/2 cupfuls hot boiled brown or uncoated rice

2 1/2 cupfuls flour

5 teaspoonfuls baking powder

1/2 teaspoonful salt 2 1/2 cupfuls milk 2 eggs

Stir the salt and milk into the hot rice; cool, then add the egg yolks well-beaten and the flour sifted with the baking powder. Fold in the egg whites beaten stiff and dry. Fry according to the general directions. These are delicious with melted currant jelly. Hominy may be substituted for the rice.

Green Corn Griddle Cakes

I cupful green corn pulp

(scraped from cobs) 1 egg, beaten light 1/2 teaspoonful salt 1/3 cupful milk

1 tablespoonful melted butter or other fat 1/2 cupful bread flour 1 teaspoonful baking powder

Mix in the order given, drop by teaspoonfuls on a hot griddle, and fry according to the general directions.
