Put the rice over a hot fire in a large saucepan of cold water and stir occasionally while it is heating. Let boil five minutes, then drain, and let cold water from the faucet run through it. The rice is now white and clean, and the grains do not stick to each other. Then proceed to boil as usual. However, this is a wasteful method, - and absolutely unnecessary unless coated rice is used.
3 cupfuls boiled brown or uncoated rice
1/4 cupful melted butter
Add the butter to the rice; mix well with a fork, set in the oven to re-heat for a few minutes and serve at once.
1 cupful brown or uncoated rice 1 1/2 teaspoonfuls salt
4 tablespoonfuls butter 1 teaspoonful curry
Boil the rice rapidly in ample salted water to cover. Drain, reserving the liquor towards a soup, and either dry the rice in the oven, or steam until dry. Then add the butter and curry, creamed together, stirring it in lightly with a fork. Serve very hot.
1 cupful brown or uncoated rice
1/2 onion . 2 cloves
Melt the fat in a saucepan, add the onion stuck with the cloves and the dry rice, and cook until the fat is taken up. Then add the tomatoes, the salt, pepper and liquid and let simmer, until the rice is tender and the liquid absorbed. Remove the onion. Then stir in the cheese with a fork, set over hot water for ten minutes to melt the cheese, and serve very hot.
1 cupful brown rice 1 pint milk (scalded) 1 small can pimentoes (minced)
1 cupful sliced or grated cheese 1 teaspoonful salt 1/4 teaspoonful pepper
Boil the rice until tender. Then combine with the other ingredients, pour into a well-buttered baking dish, and bake until browned in a hot oven.
3 cupfuls boiled brown rice 6 onions
1 teaspoonful salt 1/8 teaspoonful pepper Paprika
3 tablespoonfuls butter or olive oil
Shred the onions and peppers and cook until soft and yellowed in the fat. Add the mushrooms, if they are used, when the vegetables are half fried. Then add the rice and seasonings and cook gently, stirring occasionally, until all is well-heated through. Press down in omelet shape, and brown. Sprinkle with the cheese, fold over and turn onto a hot platter. To make this substantial enough for the main dish of a meal add one cupful of minced ham.
