1/2 cup of butter. 1 teaspoonful of baking-powder. 1 cup of sugar. 1/2 teaspoonful of almond extract. The whites of five eggs. 1 3/4 cups of flour. 1/2 pound of blanched almonds. 3/4 pound of cocoanut. 3/4 pound of citron.
Bake in a loaf and cover with a boiled icing. Mix, as usual, adding the fruit last. Fresh coçoanut, grated, is best.
3/4 pound of butter. 1/3 cup of molasses. 3/4 pound of sugar. 1 1/2 teaspoonfuls of cinnamon. 3/4 pound of flour. 1 teaspoonful of mace. 6 eggs. 1 teaspoonful of cloves. 1 1/2 pounds of raisins. 1/2 teaspoonful of nutmeg. 1 1/2 pounds of currants. 1/2 teaspoonful of soda. 1/2 pound of citron. 1/4 cup of milk or cold coffee.
1/2 cup of butter. 1/3 cup of pastry flour. 1 1/2 cups of sugar. 2 cups of entire wheat flour. 1 cup of seeded raisins. 1/2 teaspoonful of soda. 1 egg beaten without separating. 1 1/2 teaspoonfuls of mixed spices. 1 cup of sour milk.
Add the raisins (currants or nuts may be substituted) to the butter and sugar creamed together, then the egg and, alternately, the flour sifted with the soda and spices and the sour milk. Turn the mixture into small tins - it will take eighteen - and dredge the tops with granulated sugar. Bake about twenty-five minutes.
1 pound of moist brown sugar. 1 teaspoonful of allspice. 1 pound of butter (scant). 1 teaspoonful of nutmeg. 8 eggs. 2 pounds of raisins. 1 pound of flour. 2 pounds of currants. 1 cup of molasses. 1/2 pound of citron. 2 teaspoonfuls of cinnamon. 1 level teaspoonful of soda. 1 teaspoonful of cloves. 1 sherry glass of brandy. 2 glasses of sherry.
Mix as usual; at the last sift the soda into the molasses heated over the fire, and while foaming stir into the other ingredients. Bake in two bread pans between three and four hours.
1 pound of butter. 1 cup of brandy or whiskey. 1 pound of brown sugar. 12 whites of eggs. 12 yolks of eggs. 6 pounds of seeded raisins. 1 pound of flour. 3 pounds of currants. 1 teaspoonfuls of baking-powder. 2 pounds of citron. 2 teaspoonfuls of cinnamon. 2 pounds of candied cherries. 1 teaspoonful of cloves. 2 pounds of candied apricots. 2 nutmegs, grated. 2 pounds of pineapple.
Steam five hours, then bake one hour in a very slow oven. Leave cherries whole, cut citron, apricots and pineapple in large pieces.
