8 ozs. flour.
1 coffeespoon salt.
4 tablespoons ice water.
2 ozs. lard. 2 ozs. butter.
Mix all together and roll into thin sheets.
16 ozs. flour. 12 ozs. butter. 1 gal. ice water.
Juice of 1/2 lemon. Yolk of 1 egg.
Mix with a fork the flour with one-half of the butter, yolk of egg, ice water and lemon juice. Roll pastry thin, spread on it the balance of the butter, fold and roll several times until well mixed.
18 apples.
2 eggs.
1/2 cup cream.
2 tablespoons butter. 1 1/2 cups sugar. 1 lemon.
Grate apples and beat in melted butter, sugar, cream, eggs and the juice of lemon; put this in pastry with strips of pastry across and bake.
1 cup brown sugar. 1 doz. apples.
1 teaspoon powdered cinnamon. 1/2 cup butter.
Peel and core apples and slice very thin, put into pastry and cover with sugar, a little cinnamon and butter, then put in another layer of apples fixed in the same way. Bake about 3/4 of an hour.
Yolks of 4 eggs. 4 ozs. butter.
4 1/2 ozs. sugar.
2 tablespoons powdered sugar.
Beat lightly together the yolks of 4 eggs the white of 1 egg, melted butter and sugar. Put into pastry and bake slowly until cooked; then put on top a meringue made of the whites of 3 eggs and powdered sugar and bake a little longer.
1 qt. milk.
1 cup sugar.
1 tablespoon butter.
3 eggs.
2 tablespoons corn starch. 5 tablespoons grated chocolate.
1 tablespoon vanilla.
2 tablespoons powdered sugar.
Make a pastry and bake it, then put in the cream, which is made by boiling milk with chocolate, corn starch, sugar, butter, yolks of eggs and vanilla, bake about 5 minutes.
Make a meringue of the whites of eggs and 2 tablespoons of powdered sugar and put on top and bake again a few minutes until brown
2 eggs,
1/2 cocoanut (grated).
1 teaspoon vanilla.
1 tablespoon butter. 1 cup sugar.
Mix all together, bake pastry, put cocoanut filling in and bake again.
1 cup cranberries.
2 cups water.
2 cups sugar.
Boil cranberries with water for 1/2 hour, then add sugar and boil 15 minutes longer. Put between pastry and bake.
2 cream cheese. 1 cup cream. 4 eggs.
1 tablespoon flour. 8 tablespoons sugar. 1/2 teaspoon cinnamon.
Mix cheese, cream andflour together, add whipped eggs, sugar and cinnamon, beat well, put in pastry and bake.
Lightly beaten yolks of 5 eggs. 2 level tablespoons flour. 1 teaspoon butter. 4 ozs. sugar.
1 pt. cream.
1/4 teaspoon lemon extract.
4 ozs. citron.
Mix well together eggs, butter, flour, sugar, cream, citron and lemon extract, put into cooked pastry, and bake until brown.
2 tablespoons butter. 2 tablespoons flour. 8 eggs.
3 lemons.
1 1/2 cups sugar.
1 teaspoon yeast powder.
Cream butter and 1 cup of sugar, add flour, yeast powder, yolks of eggs, and the juice of 3 and the rind of 1 lemon, put into cooked pastry and bake. Then put a meringue made of the whites of eggs and 1/2 cup of sugar on top, and bake a few minutes longer.
2 finely minced boiled veal tongues. 1 lb. chopped seeded raisins.
1 lb. whole seeded raisins.
2 1/2 lbs. finely minced apples. 2 teaspoons ground cinnamon.
1 teaspoon grated nutmeg.
2 ozs. candied lemon peel. 2 ozs. candied orange peel. 2 ozs. candied citron peel.
1 lb. minced suet. 1 teaspoon salt. 1 teaspoon cloves. 1 teaspoon mace. 1 1/2 lbs. currants. 12 ozs. sugar. 1/2 pt. brandy. 1/2 pt sherry.
Mix all together, put in jars and seal.
2 tablespoons butter. 1 cup sugar. 1 cup molasses.
3 eggs.
2 lemons.
2 tablespoons flour.
Boil molasses, butter and sugar 15 minutes, when cold add eggs, juice of lemons and flour; bake in pastry firm.
4 boiled potatoes. 1/2 cup sugar. 1 tablespoon butter. 1/3 cup cream.
3 eggs.
1 teaspoon allspice.
1 tablespoon brandy.
Mash potatoes with cream and butter, add sugar, yolks of eggs, brandy and allspice; bake in pastry. Make a meringue of whites of eggs, put on top and bake a few minutes until brown.
1 pt. stewed pumpkin. 1/2 pt milk. 3 eggs beaten separately. 1/2 teaspoon ground ginger.
1 pinch salt.
3/4 cup sugar.
I 1/2 tablespoons butter.
Mix all the above ingredients and bake in cooked pas-try.
2 qts. strawberries.
1 qt. flour.
1 teaspoon salt.
1 1/2 cups sugar.
2 teaspoons cream of tartar mixed with flour. 1 level teaspoon soda dissolved in milk.
1 1/2 tablespoons butter. 1 egg well beaten. 1 pt. milk.
Mix 5 tablespoons sugar with butter, salt, egg and flour, add milk and make into a soft dough, roll this into thin sheets, cut and bake in jelly cake pans; while hot, butter, and place between layers, strawberries crushed with sugar. Serve with sweet cream.
